Vegan Biscuit Recipe
A quick and versatile vegan-friendly biscuit recipe using vanilla extract, vegan butter and cookie mix. These biscuits are rolled out and cut into shapes before being baked for just 10 minutes and finished with a light dusting of icing sugar.
Today we're making a simple biscuit. For this recipe, you'll need 1 and a half teaspoons of vanilla extract, 100 grams of vegan butter, 100 grams of cookie mix, one egg, 10 grams of icing sugar and 300 grams of flour.
Start by placing all of the ingredients, apart from the icing sugar, into the mixer. Begin mixing the ingredients for three minutes. Add some extra flour to the mixture and scrape everything out onto the table. Use more flour if needed to stop the mixture from sticking.
Grab a rolling pin and get flattening the mixture. Grab your moulds and start cutting out your desired shape. Place your shapes on a baking tray, and place in the oven for 10 minutes at 180 degrees. When you're done, take them out, place them on the table, and add some icing sugar, and that's it.
Ingredients
- 100g vegan butter
- 100g cookie mix
- 1 egg
- 1½ teaspoons vanilla extract
- 300g flour
- 10g icing sugar (for dusting)
Instructions
- Place all ingredients except the icing sugar into a mixer.
- Mix everything together for 3 minutes.
- Add some extra flour to the mixture, then turn it out onto a floured surface.
- Add more flour as needed to prevent sticking.
- Roll out the dough with a rolling pin until flat.
- Cut out your desired shapes using cookie cutters/moulds.
- Place the shapes on a baking tray.
- Bake in the oven at 180°C (350°F) for 10 minutes.
- Remove from the oven and let cool on a wire rack.
- Dust with icing sugar before serving.
Goes great with: A cup of afternoon tea, hot chocolate, or served with a scoop of vegan ice cream. Perfect for dunking in coffee or for gifting in decorative tins during the Christmas holidays.
