Vegan Raisin Muffins Recipe

These simple muffins combine muffin mix with vegan butter, oil, raisins and water for a quick-to-prepare treat. After just three minutes of mixing and 16 minutes in the oven, these sweet treats are ready to enjoy.

Today, we are making muffins. For this you'll need 100 grams of muffin mix, 50 grams of vegan butter, 50 millilitres of oil, 10 grams of raisins, and lastly, 50 grams of vegan butter.

Start by adding all of the ingredients into the mixer. Before you start mixing, add 50 millilitres of water. Mix everything for three minutes until it looks something like this, then scrape the mixture into the muffin cases. Place the muffins in a baking tray and bake for 16 minutes at 180 degrees. And that's it. They're ready to be eaten.

Ingredients

  • 100g muffin mix
  • 100g vegan butter (50g + 50g)
  • 50ml oil
  • 10g raisins
  • 50ml water

Instructions

  1. Add all ingredients (muffin mix, vegan butter, oil, and raisins) into a mixer.
  2. Add 50ml of water before mixing.
  3. Mix everything together for 3 minutes until well combined.
  4. Scrape the mixture into muffin cases.
  5. Place the filled muffin cases in a baking tray.
  6. Bake for 16 minutes at 180°C (350°F).
  7. Remove from the oven and allow to cool slightly before serving.

Goes great with: A cup of freshly brewed coffee or tea for breakfast. Try them with a light spread of vegan butter or jam, or warm them slightly before serving for a comforting treat.
